Roasted Red Dragon Tenderloin with Gremolata

INGREDIENTS:
• 5 lbs whole fillet of young/adult red dragon tenderloin
• 2 ¼ tablespoons of olive oil
• 1 ½ tablespoons of lemon juice
• 1 ½ teaspoons of honey
• ¾ cup of finely-chopped fresh parsley/mint/combination of the two
• ¼ cup of finely-chopped shallot
• ⅜ cup of extra-virgin olive oil
• Freshly-ground black pepper
• Salt
DIRECTIONS:
1. Place the cut of tenderloin on a large baking sheet and coat well with olive oil on all sides.
2. Season all sides of the tenderloin with salt and pepper.
3. Grill and sear the meat on all sides until medium-rare (approximately 1 to 1 ¼ hours).
4. Remove it from the grill and let it rest for 20 minutes in order to allow the juices to distribute evenly throughout the meat.
5. Whilst waiting, make the gremolata sauce. In a medium bowl, whisk together the lemon juice and honey until the honey dissolves.
6. Stir in the shallot and a generous pinch of salt, then let it sit for 5 minutes.
7. Add the herbs extra-virgin olive oil, then stir to combine. Season with salt and pepper.
8. Slice the tenderloin into thick slices and serve with the sauce. Serves 6 — or an adventuring party.
AUTHOR’S NOTES:
I’ll be honest — dragon isn’t my favourite type of meat. It’s a tad too gamey for my refined palate and yet not as tasty as it should be. But well, there’s quite a few red dragon corpses lying around the Dawnlands at present, so why not seize the opportunity to taste the flesh of this rare, oft-mythologised creature for yourself?
The tenderloin is easily the best cut of meat in a drake; all other parts are often too chewy. The red dragon’s meat in particular has a natural spicy kick to it, so be careful to not add too much pepper if you cannot withstand spiciness. The adult variant has a nice agedness to it compared to the baby wyrmling’s, but a young one would do almost just as well. I can only guess what an ancient, millennia-old dragon tastes like. Shame the Red Death got away from us.
The Chondathan gremolata sauce should provide a refreshing zest that complements the roast. And last but not least, this dish is naturally best served with traditional roast side dishes such as potatoes au gratin, grilled carrots, and pudding.

Celia Brockenhide’s gift of prophecy had saved the day once more. On the eve of the battle, she sent me a warning of the gith’s secret weapon: a great red dragon that would approach unseen and who, if allowed to break through the defences, would herald the fall of Fort Ettin. True enough, near the end of the battle, a spell-slinging ancient red dragon attacked the north wall while shrouded in invisibility.
The defenders of the north wall — myself included — met the Red Death head-on in the battlefield and ultimately forced it to retreat at the break of dawn, when centaurs from Arva arrived to clean up the remaining invaders. I attempted to scry on the dragon some 2 hours after the battle and it seemed to have left the Material Plane; likely, it had returned to the Astral Sea along with the surviving githyanki.
Aurelia Archselon’s plan to have a team of adventurers infiltrate Gadenthor and smuggle the Netherese artificial intelligence that inhabited Coll’s body, Xeron, into the city’s control room was successful. Gadenthor is officially gith-free. However, Coll and Xeron fully merged in the process, as Coll himself explained, and he has decided that he would like to remain in/as Gadenthor. I last saw the city fly westward, probably for Harnash. It is hard to predict what the future will hold for Gadenthor…
The commander of the invading force was also captured. The Council’s plans for her are as of yet unknown.
Though the final stand happened in Fort Ettin, the destruction from the war spilled all across the Dawnlands. I’m hearing reports that Port Ffirst and Stoneleaf suffered the worst damage, with significant parts of each town having been destroyed due to a lack of fortification. Many Dawnlanders and auxiliary forces perished during the battle. Notable amongst the dead include:
• Daring Heights City Councillor Samed Mirass
• Daring Army Commander Cordelia Jadefist
• Oriloki Manyvoices of Daring Academy
• Kaltenzahn, the young red dragon of Fort Ettin
• Silvia, Kurtz’s warlock and Miss Delilah’s adopted sister
• Father Donovan Tithetaker, High Priest of Umberlee of the Temple of the Two Faiths in Port Ffirst
• Danse Macabre of the Carnival of Dreams, Celia’s former employer
I shall keep Your Majesty informed of any successful resurrections.
